In fact the EHIC is acceptable except that it should be the equivalent of E121 rather than the E111 (both these numbers have recently changed but relate to the tourist(E111) and resident in foreign country version) . The E121 or new equivalent is easily got from the UK side.
As for the financial bit I only presented my pension statement and that was accepted straight off in Scalea.
